Easy Meal Inspiration

 

This blogpost goes alongside this video we made to show how easy a plant-based, healthy diet can be whether you live in the most vegan-friendly country or the least. I show you some of my favourite foods and how I like integrating them to make really easy, really accessible and mostly really cheap meals.

A plant-based, healthy diet can be as easy or as complicated as you want it to be and as cheap or as expensive as you want it to be. You can go for all the meat alternatives, dairy free cheeses and spreads, vegan desserts, superfood powders and elixirs or you can stick to wholefoods which are usually quite cheap when in season and available at the farmers market or at the supermarket/bulk food store.

Here I wanted to show you some of my go-to meals that can be made in less than 20 minutes as they mostly only involve tossing some things together.

I like keeping my kitchen stocked up to avoid stress and going to the supermarket more than I have to or want to. My freezer is always packed with fruit for a creamy and refreshing smoothie or to quickly cool off a steaming bowl of porridge. I also love having cooked grains and greens in my fridge and tinned legumes in my pantry for quick and easy lunches and dinners. I keep jars full of nuts and seeds and usually use these as toppings on savory and sweet dishes.

I'm a big fan of making huge portion sizes of food so that I can eat these throughout the week. So if I'm making roasted potatoes for example, I'll make enough to last me a few meals so I can easily toss them into a salad or reheat and make myself a macro bowl.
